鱼香春雨 Braised Glass Noodle with Mock salted Fish

【材料】
粉丝150克、红萝卜50克、香菇20克(泡软切丝)、甜青红椒各30克(切条状)、素火腿30克、芹菜20克(切段)
【调味料】
素蚝油1汤匙、生抽2汤匙、黑醋2汤匙、胡椒粉1⁄2小匙、麻油1小匙、水1⁄2 碗(拌匀待用)
【做法】
1. 粉丝剪成长段,冲洗,浸软15分钟,沥干。
2. 素火腿切长条煎香备用。(图1)
3. 烧热油11⁄2汤匙,炒香香菇丝、红萝卜、青、红椒及中芹,加入调味料拌匀,再加入粉丝拌炒至汁浓稠。

4. 最后加入素火腿炒均匀即可上碟。(图5)

【Ingredients】
150g glass noodles, 50g carrot, 20g Chinese mushroom (soaked and shredded), 30g each of green and red capsicum (cut strips), 30g mock ham, 20g Chinese celery (cut into sections)
【Seasoning】
1 tbsp vegetarian oyster sauce, 2 tbsp soy sauce, 2 tbsp balsamic, 1⁄2 tsp pepper, 1 tsp sesame oil, 1⁄2 bowl water (mixes all)
【Method】
1. Cut glass noodles into sections, soaked for 15 minutes and drain.
2. Cut mock ham into strip, deep fry till crispy, drain and set aside.(pic 1)
3. Heat 11⁄2 tbsp oil in wok, sauté mushroom and carrot until fragrant; add in capsicums and chinese celery, stir fry briefly.
Toss in seasoning, follow with glass noodles, cook until gravy thickens.(pic 2-4)
4. Toss in mock ham, stir fry well and dish out. (pic 5)
