香酥炸鸡汉堡包 Crispy Spicy Chicken Steak Burger

【鸡扒材料】
鸡胸肉600克、面粉100克、A蛋2粒(打散)
【鸡肉腌料】
鸡蛋1粒(打散)、芥末酱1汤匙、盐1茶匙、白糖1汤匙、胡椒粉1⁄2茶匙、辣椒粉1汤匙
【脆皮料】混合
120-150克捣碎薯片、混合香草2茶匙、黑胡椒粉1茶匙
【配料】
汉堡包6-8个(横切开涂牛油)、番茄、青瓜(切片)、芝士片、生菜、包菜丝沙律(各适量
【做法】
1. 把鸡肉根据汉堡面包体积切出,厚度约1公分,然后以刀背敲松,以腌料腌好。(图1)
2. 把鸡肉沾面粉,然后沾蛋液,再沾脆皮料。完成后把鸡肉收入冰箱30分钟。(图2)
3. 热足够的油,把鸡扒炸至金黄色。(图4)
4. 在汉堡包上涂少许美奶滋,然后随自己喜好搭配生菜,番茄,青瓜,香酥炸鸡扒,芝士片及包菜丝沙律,盖上汉堡包即可。(图5-8)

【Chicken Ingredients】
600 g chicken breast meat, 100 g plain flour (for dusting), 2 “Grade A” eggs (beaten lightly)
【Marinate for Chicken】
1 egg(beaten lightly), 1 Tbsp yellow mustard, 1 tsp salt or to taste, 1 Tbsp sugar, 1⁄2 tsp ground pepper, 1 heaped Tbsp chili powder or to taste
【Crispy Coating】combined
120-150g crushed potato chips, 2 tsps mixed dried herbs, 1 tsp ground black pepper
【Sub Ingredients】
6-8 burger buns (split & buttered), 2 tomatoes (sliced), cucumber (sliced), cheese (slices),lettuce leaves, coleslaw
【Method】
1. Cut the chicken meat 1cm thick and large enough to fit the burger buns. Lightly pound each chicken slice with the back of your clever. Marinate the chicken slices
with the chicken marinade. (pic 1)
2. Dust each chicken meat into the plain flour, then roll into the beaten egg mixture before coating the chicken with the potato crisps mixture. Set all in the refrigerator
for 30 minutes. (pic 2-3)
3. Heat sufficient oil in a pot, deep fry the chicken pieces until golden brown.(pic 4)
4. Lay a layer of bun, top with some mayonnaise spread, lettuce leaf, tomato, cucumber, crispy spicy chicken steak, cheese slices and coleslaw, cover with bun to serve.(pic 5-8)
