菜肉馅派饼 Cornish pasties

材料:

普通面粉250克、牛油125克(冷冻状态,切粒) 、冷水65毫升、盐1小撮

馅料:

肉碎100克、马铃薯100克、大葱60克(剁碎) 、罐头青豆50克、迷迭香2束、盐和胡椒粉适量

蛋液:

鸡蛋1粒、牛奶5毫升

烤炉预热至180°C

派皮做法:

  1. 把面粉和盐一起筛过。
  2. 加入冷牛油粒,然后用手指和面粉搓均。
  3. 加入冷水搅拌,但不可搅拌过度以免面团变硬。
  4. 以布盖面团,让它醒30-45分钟。

馅料做法:

  1. 把肉碎、马铃薯、大葱、迷迭香及青豆混合。
  2. 以盐和胡椒粉调味。

吃法:

  1. 把面团杆成3毫米厚,切出圆圈。
  2. 舀1汤匙馅料铺在圆面皮中间。
  3. 把面皮边沿弄湿后指压收口。
  4. 把派饼放在烤盘上,涂上蛋液。
  5. 5   放入预热至180°C的烤炉里烤15分钟,然后转至130°C,再烤20-30分钟。

Pastry dough
250 gm Plain flour,125 gm Chilled Butter – cubes,65 ml Cold water,
1 pinch Salt

Filling
100 gm Minced beef/pork/chicken,100 gm Potato –small diced,60 gm Onion – chopped,50 gm Canned green peas,2 sprig Fresh thyme,t.t  Salt, pepper

Egg Wash
1 no Whole egg,5ml milk
Preheat oven at 180°C

Method of Preparation:
To prepare pastry:
1. sieve flour and salt together in a big mixing bowl.
2. add in chilled butter, rub into flour with finger tips.
3. add cold water and bind together. *do NOT over handle the dough as it will turn hard.
4. cover with a damp cloth and rest in refrigerator for 30-45 minutes.
To prepare the filling:
1. combine minced meat, potato, onion, fresh thyme and green peas in a bowl.
2. season to taste with salt and pepper.
To serve:
1. roll the pastry dough into 3mm thick, use a round cutter to cut out into circle.
2. place a spoon full of filling in the centre of each circle of pastry dough.
3. wet the edges with water and press and seal the edge.
4. put the Cornish pastry on a baking tray and brush well with egg (egg wash).
5. bake in a preheated oven at 180°C for first 15 minutes and the reduce to 130°C for another 20-30 minutes
