肉丸通心粉 Spaghetti & meatballs

【肉丸材料】

猪肉碎200克、鸡肉碎200克,栗米粉2汤匙、鸡蛋1粒、法式Dijon芥末醬1汤匙、白糖1汤匙、面包糠30克、盐和胡椒粉适量

【酱汁材料】

橄榄油3-4汤匙、月桂叶1片、蒜头3瓣(剁碎)、大葱1粒(剁碎)、番茄350克(剁碎)、红萝卜1条(剁碎)、罐头番茄泥2杯、牛至草1汤匙、高汤11⁄2杯+1汤匙鸡粉、盐和糖适量

意大利面500克(根据包装指示把意大利面煮熟)、parmesan cheese芝士适量

 

【肉丸做法】

1.把所有肉丸材料混合,用手挞至起胶。(图2-3)

2.用汤匙将肉酱搓成圆球,放入冰箱冷藏至少30分钟定型。

3.以中火热不黏锅,放入肉丸煎2-3分钟至金黄色和熟。(图4)

【酱汁做法】

1.在锅里再加油,把月桂叶,蒜头及大葱炒5分钟至软身后,加入番茄,以中火再煮2分钟,加入番茄泥和红萝卜。(图5)

2. 接着加入牛至草,高汤及鸡粉,继续以中火煮5分钟,然后以盐和糖调味,再加入肉丸后熄火。(图6-8)

 

【吃法】

把通心粉平均分配入碗,放上牛肉丸和撒上parmesan芝士即可。

 

【Meatball Ingredients】

200 g minced pork meat, 200 g minced chicken meat, 2 Tbsps cornflour, 1 egg, 1 Tbsp Dijon mustard, 1 Tbsp sugar, 30 g breadcrumbs, salt & pepper to taste

【Spaghetti sauce Ingredients】

3-4 Tbsps olive oil, 1 bay leaf, 3 cloves garlic(chopped), 1 big onion(chopped), 350 g fresh tomatoes (chopped), 1 carrot(chopped), 2 cups of tomato purree, 1 Tbsp dried oregano, 1 1⁄2 cups stock + 1 Tbsp stock granules, sugar & salt to taste

500g spaghetti(Cook the spaghetti following packet directions until al dente), parmesan cheese, to serve

 

【To prepare meatballs】

1.Combine all meat ball ingredients in a large bowl, mix till spingy. (pic 2-3)

2.Roll table spoon full of the mince mixture into balls and place on a plate. Place in the fridge for 30 minutes to set.(pic 4)

3.Heat a large non-stick frying pan over medium heat. Fry the meatballs till brown and cook. Transfer meat balls to a plate.(pic 5)

【To prepare spaghetti sauce】

1.Pour olive oil to the pan over medium heat. Add bay leaf, garlic and onion, cook, stirring, for 5 minutes until onion softens. Add the chopped tomatoes, cook for 2 minutes, add the carrots and puree. (pic 6-8)

2.Add oregano and stock, bring to boil for 5 minutes, add seasoning and meatball. Turn off heat.
