照烧汉堡包 Teriyaki Burger

【日式肉饼材料】可做6-8个
鸡肉碎600克、大葱1粒(剁碎)、莞荽茸2茶匙、狄绒芥末酱2茶匙、A蛋1粒(打散)、软面包糠35克、白糖1汤匙、盐和胡椒粉适量
【配料】
汉堡面包6-8个、照烧酱 1碗、凉拌青瓜、切片番茄、生菜
【凉拌青瓜材料】
青瓜1条(切丝)、麻油1茶匙、花生酱2-3汤匙、烤白芝麻1-2汤匙
【做法】
1. 把所有材料用手混合。(图1)
2. 把肉馅做成圆饼状,约135-150克重,肉饼面积应该和所用汉堡包一样大小,然后放入冰箱30分钟。
3. 起锅热少许油,淋照烧酱在鸡肉饼上,以小火煎3-5分钟至两边熟透。(图2)
4. 凉拌青瓜做法:把所有相关材料混合即可。(图3-4)
【组合】
将汉堡面包切半涂牛油,放上生菜、番茄,再放上鸡肉饼。淋上照烧酱,再铺上凉拌青瓜丝,盖上汉堡包即可。(图5-6)

【Japanese Patties Ingredients】for 6-8 portions
600g mince chicken, 1 big onion (finely chopped), 2 tsp minced coriander leaves, 1 tsp Dijon mustard, 1 “Grade A” egg(beaten), 35g fresh breadcrumbs, 1 Tbsp sugar, salt & pepper to taste
【Sub-Ingredients】
6-8 burgers buns, 1 bowl teriyaki sauce, 2 tomatoes, cucumber slaw  sliced lettuce leaves
【Cucumber Slaw】
1 cucumber (shreadded), 1 tsp sesame oil, 2-3 Tbsps peanut butter, 1-2 Tbsps white sesame seeds (toasted)

【Method for Japanese Patties】
1. Combine all burger patties ingredients and mix with damp hands. (pic 1)
2. Form into round patties about 135-150g each. The size of the burger patties should be the same as the burger bun. Chill for 30 minutes.
3. Preheat non-stick pan, add some oil & pan fry the burger patties turning over just to sear it. Add in teriyaki sauce and cook for 3-5 minutes over low heat until thoroughly cooked, turning over once. (pic 2)
4. To prepare cucumber slaw: Just combine all ingredients. (pic 3-4)
【To Assemble】
Split and butter burger buns. Lay salad leaf, tomatoes on burger buns,spread sauce over, place some cucumber slaw and top with another half of burger bun, top with chicken burger. (pic 5-6)
