上汤双蛋时蔬 Twin Egg Vegetable Soup

【材料】
皇帝苗200克、皮蛋1粒、咸蛋1粒(熟)、蒜头10粒(炸香)、高汤300克
【调味料】
盐少许、鸡精粉½茶匙、胡椒粉少许、麻油1茶匙
【做法】
1. 皮蛋及咸蛋,各别切丁。(图1)
2. 蒜头炸香备用。(图2)
3. 把高汤煮滚,放入皇帝苗煮至熟。(图3-4)
4. 加入双蛋,炸蒜粒和调味料煮滚。(图5)
5. 盛入浅碗中,并淋入适量熟油,即可。

【Ingredients】
200g Malabar-spinach (Di Huang Miao), 1 century egg, 1 cooked salted egg, 10 pips garlic (deep fried), 300ml stock
【Seasoning】
Dash of salt, ½ tsp chicken powder, dash of pepper, 1 tsp sesame oil
【Method】
1. Dice century egg and salted egg. (pic 1)
2. Deep fry garlic and set aside.(pic 2)
3. Bring stock to boil and add in Malabar-spinach, boil until cooked.(pic 3-4)
4. Add in both egg, fried garlic and seasoning; bring to boil again. (pic 5)
5. Dish out in shallow bowl and sprinkle some hot oil over to serve.
