鲜蘑菇汤 Fresh mushroom soup

【材料】
牛油2汤匙、大葱1粒(剁碎)、蒜头2瓣(剁碎)、鲍鱼菇450 克(撕碎)、百里香2束(剁碎)、中筋面粉2汤匙、鸡高汤 700毫升、鲜奶油250毫升、盐和胡椒粉适量
【做法】
1. 以中火热锅,把牛油溶解后加入大葱及蒜茸,炒约5分钟成金黄色。(图1-2)
2. 加入所有的菇和百里香,煮约8分钟至鲍鱼菇转黄;然后加入面粉,并慢慢倒入高汤,煮至滚后转小火焖煮,不加盖。(图3-5)
3. 让汤冷却后去掉百里香,放入电动搅拌器搅拌至细滑。(图6)
4. 把搅拌好的蘑菇汤回锅,以盐和胡椒粉调味,并加入鲜奶油;再次煮滚后才盛入碗。(图7-8)
5. 吃前加额外奶油和少许百里香。


【Ingredients】
2 tbsps butter, 1 big onion(chopped), 2 cloves garlic (chopped), 450g fresh oyster mushrooms (roughly torn), 2 stalks chopped fresh thyme, 2 tbsp all purpose
flour, 700ml chicken broth, 250ml fresh cream, salt & pepper to taste
【Method】
1. Melt butter in large pot over medium-high heat. Add onions & garlic; sauté until golden, about 5 minutes. (pic 1-2)
2. Add all mushrooms and thyme; sauté until mushrooms begin to brown, about 8 minutes. Stir, then mix in flour. Slowly stir in broth; bring soup to boil. Reduce heat; simmer uncovered 10 minutes. (pic 3-5)
3. Leave to cool before blending it; removing the thyme leaves.(pic 6)
4. Return the blended soup back to the pot, season with salt and pepper; add cream and bring to a boil before ladling into bowls.(pic 7-8)
5. Top with extra cream and thyme leaves to serve.
