香烤茄子卷 Grilled Eggplant Roll

【材料】
A:圆茄子 2个
B:猪绞肉 60克、虾肉 200克(拍扁剁碎)、香菇 2朵(浸软,切末)、青葱 1支(切末)、蛋白 1个
【调味料】
椰浆 100毫升、咖哩粉 2汤匙、鱼露 1茶匙、盐 1⁄2茶匙
【做法】
1. 茄子洗净后,切成薄片,泡过盐水,沥干备用。
2. 将所有的材料(B)混合搅拌均匀,甩打成胶,做成馅料。(图1-2)
3. 依次序在茄子片放上适量的馅料,包卷起来,然后涂上调味料,直到包完所有的茄子片为止。(图3)
4. 烤箱预热180℃,将做法3的茄子卷排在铺上锡纸的烤盘上,烤约10-12分钟至颜色微焦,即可享用。

【Ingredients】

B:60g minced meat, 200g shelled shrimp (chopped), 2 Chinese mushroom (soaked & chopped), 1 stalk spring onion (chopped), 1 egg white
【Seasonings】
100ml coconut milk, 2 tbsp curry powder, 1 tsp fish sauce, 1⁄2 tsp salt
【Method】
1. Wash eggplant, slice thinly and then soak in salt water.
2. Mixes all ingredients B and blend with hand until spingy as filling.(pic 1-2)
3. Spread filling on top of each eggplant slices, roll up and brush with seasoning mixture. Repeat steps until all materials used.(pic 3)
4. Grill eggplant roll in pre-heated oven at 180℃ for 10-12 minutes or until slightly brown.
