铁板芋泥烧包 Yam Siew Bao

【面皮材料】
包粉250克、幼糖50克、酵母1.5小匙、双倍发粉1小匙、温水100-120克、白奶油30克
【馅料】
芋头400克、糖80克、油1汤匙
【馅料做法】
芋头切块蒸熟,压烂,加入糖、油拌均即可待用。(图1-3)
【做法】
1. 把全部面皮材料放入搅拌盆内,拌至粉团柔滑,放置10-15分钟。(图4-5)
2. 把芋泥馅料分每粒20克,烧包面团每个40克,包入馅料,排放好,用湿布盖上,待发
25-30分钟。(图6-7)
3. 将面团略压扁,烧热平底锅,涂上少许马芝淋油,排上芋泥烧包以小火煎至两面金黄色
即可。

【Dough Ingredients】6
250g bao flour, 50g castor sugar, 1.5 tsp yeast, 1 tsp double action baking powder, 100-120g warm water, 30g softener
【Filling Ingredients】
400g yam, 80g sugar, 1 tbsp oil
【Method for fillling】
Cut yam and steam till soft. Mashed it while still hot and mix well with sugar and oil. (pic 1-3)
【Method】
1. Combine all dough ingredients in a mixing bowl and mix into soft dough, rest for 10-15 minutes.(pic 4-5)
2. Divide filling into 20g per portions. Divide dough into 40g per portion. Flatten the dough and wrap in filling, rest
dough covered with wet tea towel for 25-30 minutes.(pic 6-7)
3. Brush non stick pan with some margerine. Faltten the yam Siew Bao slightly and pan fry untill both side golden brown.
