金瓜上汤苋菜 Pumpkin Chinese Spinach Soup

材料 A:
苋菜苗150克、姜丝1汤匙、油1汤匙、盐1茶匙
材料 B:
金针菇60克(切小段)、蘑菇2粒、鲜香菇2朵(切小块)
材料 C:
金瓜100克(蒸熟,压成泥)
材料 D:
油1汤匙、黑胡椒粒1/2茶匙(压碎)、粟粉1茶匙、加水2汤匙
调味料:
味素、盐各1/2茶匙、姜汁3汤匙、水1杯
做法:
1.烧热1汤匙油,将姜丝炒香。倒入适量水和盐煮至滚,加入苋菜煮软身,捞出挤干水,放入已抹上油的杯中,压平、倒扣在碟上备用。(图2)
2.烧热1汤匙油,爆香黑胡椒碎,加入B料炒片刻,加入调味料和C料,搅动至滚,加入生粉水勾芡,倒入蝶中。(图3)
要点:
*金瓜配合黑胡椒碎和姜汁是最佳的配搭。
*坐月子常见的问题是便秘;吃金瓜和苋菜可预防便秘。

INGREDIENTS A:
150g baby Chinese spinach, 1 tbsp juliennes ginger, 1 tbsp oil, 1 tbsp salt
INGREDIENTS B:
60g tiger lily, 2 pcs champignons, 2 pcs fresh mushroom (cut into small pieces). (pic 2)
INGREDIENTS C:
100g pumpkin (steam and mash)
INGREDIENTS D:
1 tbsp oil, 1/2 tsp black peppercorn (crush), 1 tsp corn flour, 2 tbsp water
SEASONING:
1/2 tsp MSG, 1/2 tsp salt, 3 tbsp ginger juice, 1 cup water
METHOD:
1.Heat 1 tbsp oil, saute ginger until fragrant, add in water and salt and bring to boil, add Chinese spinach and cook until the vegetable is soften, dish out into a greased cup, press firmly and overturn into a deep serving plate. (pic 2)
2.Heat 1 tbsp oil, saute black peppercorn until fragrant, add in ingredients B and stir-fry until fragrant, add in water, seasoning and C, stiring occasionally until starch and pour on serving plate, done. (pic 3)
Tips
Pumpkin, ginger and black pepper is perfect match. Constipation are normal symptom during confinement, this dish will help to solve the problem.
