蛋白冬茸汤圆露 Mashed Winter Gourd Dumpling

【材料】
A:糯米粉250克、水约120毫、红色素少许、白油30克
B:冬瓜200克(去皮瓤)、甜玉米粒 1⁄2 杯、蛋白3粒、水1公升、糖适量(试味)
【做法】
1. 将A料混合均匀成糯米团至不沾手,然后分成2份,1份加入红色素,另1份保留白色。(图1-2)
2. 把粉团分成小等份,分别揉成小圆球。(图3-4)
3. 将小圆球放入滚水中煮至浮起捞出,浸入冷水中片刻即成汤圆,备用。(图5)
4. 冬瓜加水研磨成茸,加入甜玉米粒煮滚约10分钟。(图6-8)
5. 加入汤圆、糖试味后慢慢注入蛋白液,沿着镬边绕圈倒入即可。(图9-10)


【Ingredients】
A:250g glutinous rice flour, about 120ml water, drops of red coloring,30g shortening
B:200g winter gourd (skinned), 1⁄2 cup sweet corn kernel, 3 egg white, 1 liter water, sugar to taste
【Method】
1.Mixes and knead ingredients A into smooth dough, apportion to 2 and colored one of them to red and
keep another as white.(pic 1-2)
2.Apportion dough into small pieces and knead into balls.(pic 3-4)
3.Boil dumplings in boiling water until afloat, and then soak in cold water.(pic 5)
4.Grind winter gourd with water using electric blender, boil with sweet corn kernel for 10 minutes.(pic 6-8)
5.Add in boiled dumplings, season with sugar and then pour in egg white from around the side of pot,
done.(pic 9-10)
