红萝卜松饼 Carrot Muffin

【材料】

A:牛油75克、黄糖85克、柠檬皮茸4克、鸡蛋50克、香草精3克、优葛75克、红萝卜75克(刨茸)

B:蛋糕粉135克、发粉3克、苏打粉1克、桂皮粉1克(随意)、盐2克

【做法】

1.把牛油、黄糖及柠檬皮茸搅拌至发起。(图1)

2.慢慢加入鸡蛋,香精及优葛,搅拌均匀。(图2)

3.把所有材料B一起筛入搅拌均匀。

4.最后加入红萝卜茸。(图3)

5.将面糊挤入烤模内,放进预热至190癈 的烤炉里烤 13-14分钟即可。(图4)

6.取出松饼待凉后,撒上糖粉。

【Ingredients】

A:75g butter, 85g brown sugar,   50g egg, 4g lemon zest, 3g vanilla essence,75g yoghurt, 75g carrot (grated)

B:135g cake flour, 3g baking powder, 1g baking soda, 2g salt,1g cinnamon powder (optional)

【Method】

1.Cream together butter, sugar and lemon zest.   (pic 1)

2.Slowly add in eggs, essence and yoghurt. Mix till well incorporated. (pic 2)

3.Sift together all the dry ingredients.

4.Add the dry ingredients to the wet ingredients.  Lastly, add in the grated carrots.(pic 3)

5.Pour the mixture into cake mould, bake at 190℃ for 13-14 minutes.(pic 4)

6.Sprinkle with some castor sugar before serve.(pic 5)
