素杂酱拌面线 Mee Sua Salad

【材料】
福州面线200克、番茄80克(切丁粒)、海带芽20克(浸发)、芫茜碎30克、麻油1小匙
【酱料】
素豆肉碎30克(炸香)、冬菇3朵(剁碎)、灵芝菇100克、红辣椒2只(剁碎)
【调味料】
豆酱11⁄2 大匙、素蚝油1大匙、生抽1大匙、糖1小匙、胡椒粉1⁄4小匙、水3汤匙
【做法】
1.把面线放入沸水中,加入少许油一起汆烫至熟和软化,捞起沥干后加上麻油拌匀备用。(图1)
2.爆香辣椒、冬菇、灵芝菇、豆肉碎,加入调味料一起拌炒,改用小火焖煮一会至汁料微浓稠。(图2-4)
3.加入福州面线及素杂酱、番茄、海带芽与芫茜拌均匀,即可盛碟享用。(图5)

【Ingredients】
200g Fuzhou Mee Sua, 80g tomato (diced), 20g seaweed sprout (soaked), 30g chopped coriander, 1 tsp sesame oil
【Sauce】
30g chopped gluten (deep fried), 3 pcs Chinese mushroom (chopped), 100g Ling Zhi mushroom, 2 red chili (chopped)
【Seasoning】
11⁄2 tbsp soy bean paste, 1 tbsp vegetarian oyster sauce, 1 tbsp soy sauce, 1 tps sugar, 1⁄4 tsp pepper, 3 tbsp water
【Method】
1.Scud Mee Sua in boiling water with some oil until soften, drain and toss with sesame oil, set aside. (pic 1)
2.Sauté red chili, Chinese mushroom, Ling Zhi mushroom, fried chopped gluten and seasoning until fragrant; and then simmer in low heat until gravy slightly thicken.(pic

3.Add in mee sua, then toss in the cooked sauce, tomato, seaweed sprouts and coriander, serve.(pic 5)
