火腿乳酪疙瘩 Spaetzle Baked with Ham and Gruyère cheese

【疙瘩材料】
A:普通面粉280克(筛过)、盐1茶匙、发粉1⁄4 茶匙、牛奶180毫升+A蛋2粒、牛油2汤匙
B:大葱1粒(切片)、火腿170克、黑胡椒粉1⁄4 茶匙、洋莞荽茸2汤匙、盐适量
【顶料】
牛奶250毫升、A蛋2粒、普通面粉2汤匙、黑胡椒粉1⁄4 茶匙、鲜百里香2茶匙、盐1⁄2 茶匙、瑞士芝士100克(刨茸)
2.5 x 9寸方形烤盘(涂油)
大孔滤网(洞口约0.8公分大)

【疙瘩做法】
1.把面粉,发粉及盐混合。
2.把牛奶和鸡蛋混合后倒在粉料上,以手打器搅拌均匀后让它醒10分钟。
3.煮适量滚水,把大孔滤网放在沸水的锅口上,倒入半杯的面团。
4.把面团从洞口挤压出去,成疙瘩状。(图1)
5.煮约3分钟至疙瘩浮起, 捞出滴干水。(图2)
6.重复步骤把其余疙瘩煮好。

【火腿做法】
1.将火腿切细粒备用。起锅热牛油,放入大葱炒5分钟至转黄。(图3-4)
2.加入火腿茸和黑胡椒粉,然后熄火。
3.加入滴干的疙瘩,搅拌均匀,以盐调味,最后撒上洋莞荽茸炒匀,再移到烤盘里。(图5)

【组合】
1. 把所有顶料材料混合(芝士除外),然后倒在疙瘩料上。(图6)
2. 均匀地撒上瑞士芝士茸。(图7)
3. 放入预热至190℃的烤炉里烤35分钟或至芝士转黄即可。(图8)
4. 温吃。

【Spaetzle Ingredients】
A:280 g plain flour(sifted), 1 tsp salt, 1⁄4 tsp baking powder, 180 ml milk + 2 “Grade A” eggs
B:2 Tbsps butter, 1 big onion(sliced), 170g ham, 1⁄4 tsp black pepper, 2 Tbsps chopped parsley, salt to taste
【Milk topping】
250 ml milk, 2 “Grade A” eggs, 2 Tbsps plain flour, 1⁄4 tsp black pepper, 2 tsps fresh thyme, 1⁄2 tsp salt, 100 g shredded Gruyère cheese
9” square baking dish x 2.5” height(greased)
Colander with large holes(about 0.8cm diameter holes, to press spaetzle through)

【Method for spaetzle】
1.In a large mixing bowl, sift together flour and baking powder, add in salt.
2.In a cup combine eggs and milk, pour mixture into flour; stirring with a whisk until combined. Let stand 10 minutes.
3.Bring sufficient water to a boil in a large saucepan. Hold the colander over boiling water; spoon about 1⁄2 cup dough into colander.
4.Press the dough through holes with a rubber spatula (droplets will form spaetzle); set colander aside.(pic 1)
5.Cook 3 minutes or until done (spaetzle will rise to surface). Remove with a slotted spoon; drain in a strainer. (pic 2)
6.Repeat procedure with remaining dough.

【To prepare ham】
1.Finely dice ham. Heat pan with some butter, add onion; cook 5 minutes or until lightly browned, stirring frequently. (pic 3-4)
2.Stir in ham and black pepper, remove from heat.
3.Toss in drained spaetzle and combine, adjusting salt to taste. Sprinkle chopped parsley over and transfer into greased baking dish.(pic 5)
【To bake spaetzle】
1. Combine all milk topping ingredients except the cheese, stirring with a whisk. (pic 6)
2. Pour milk mixture over spaetzle mixture, sprinkle evenly with grated gruyere cheese. (pic 7)
3. Bake at 190℃ for 35 minutes or until cheese is lightly browned.(pic 8)
4. Serve warm
