椰汁青口 Coconut Milk Black Mussel

【材料】3人份
黑壳青口450克、栗米油45毫升、蒜头5瓣(拍烂)、大葱120克(剁碎)、姜45克(切丝)、墨西
哥辣椒2条(剁碎)、椰浆350克、烹调奶油150克、菠菜叶100克)、黑胡椒粉2克、盐适量
法国面包1条
【做法】
1.在锅里热油,把姜,蒜头及大葱爆香,然后加入黑胡椒粉及辣椒。(图1-2)
2.拌入椰浆和奶油,煮至减半。(图3)
3.加入菠菜,煮至熟后加入青口。(图4)
4.以盐调味,即可配法国面包吃。

450g black mussel(cleaned), 45ml corn oil, 5 cloves garlic (crushed), 120g onion(chopped), 45g ginger(cut in thin strips), 2nos Jalapeno pepper (finely diced), 350g coconut milk, 150g culinary cream, 100g spinach leaves, 2g ground black pepper, salt to taste 1 french loaf
【Method】
1.Heat the cooking oil in a cooking pot.
2.Sauté the ginger, garlic and onion till aromatic; add in black pepper and Jalapeno pepper.(pic 1-2)
3.Stir in coconut milk and culinary cream. Bring to a boil and reduce to half.(pic 3)
4.Add in spinach, cooked till welted, follow by adding in mussel. (pic 4)
5.Season to taste with salt. Serve hot with baguette.
