墨西哥脆皮卷 Crispy Mexican Rolls

【材料】
大条香肠5-6条(煎熟后一开四)、鸡胸肉1副、红黄灯笼椒各1⁄2粒、番茄2粒(切1公分长)、墨西哥卷饼皮1包、栗米脆片60克(捣碎)、Cheddar芝士茸100克
【调味料】
美奶滋2-3汤匙、烧烤酱、辣椒酱及芥末酱适量、Cheddar芝士片8-10片
【做法】
1. 把香肠及鸡肉分别以牛油煎熟。(图1)
2. 把灯笼椒也煎熟。(图2)
3. 在每片墨西哥卷饼皮上铺鸡肉,香肠,灯笼椒,番茄及芝士,然后淋上调味料。(图3-4)
4. 把材料紧紧包扎,然后放在涂油的烤盘里。(图5)
5. 在饼卷上撒芝士茸和栗米脆片。(图6)
6. 放入烤炉烤约5-10分钟至芝士溶解即可。(图7)

 

【Ingredients】
5-6 large sausages(pan-fried and cut into quarters), 1 chicken breast, 1⁄2 each of red/yellow capsicums,2 tomatoes (cut into 1cm sticks), 1 packet Tortilla wraps (store-bought), 60g cornflakes(crushed), 100g grated cheddar for topping
【Seasoning】
2-3 tbsps mayonnaise, Store-bought BBQ sauce, chili sauce, yellow mustard, 8-10 pieces cheddar cheese
【Method】
1. Panfry the sausages and chicken meat with some butter, set aside.(pic 1)
2. Pan fry the capsicum slices too and set aside.(pic 2)
3. Over each piece of wrap, top with chicken pieces, sausage, capsicum, tomatoes, cheese, sprinkle seasoning over.(pic 3-4)
4. Wrap it up tightly and place into a greased ovenproof tray.(pic 5)
5. Top each warp with cheddar and crushed cornflakes. (pic 6)
6. Grill the wraps until cheese melts, about 5-10 minutes and serve immediately.(pic 7)
