卷筒肉排 Meat Roll Chop

┃材料┃
肉眼排5片(每片约1分宽度)、咸蛋黄15粒(取3粒揉成一条状蒸熟)、紫菜2张(剪开成5片)、面包糠1碗、虾胶120(加入少许盐和蛋白拌匀)
┃腌料┃
盐½茶匙、鸡精粉½茶匙、糖¼茶匙、粟粉1茶匙、鸡蛋液½粒
┃做法┃
1. 将每片肉排轻轻捶松至肉质松软,加入腌料拌匀。(图1-2)
2. 把肉片摊开,面上放入一片紫菜,并涂抹适量虾胶,再把蒸熟的咸蛋黄放入,由边卷起成筒状。(图3-4)
3. 全部卷好后,再沾上面包糠黏住肉排。(图5)
4. 烧热炸油,将肉卷放入油锅内,以小火炸约1分钟,再改用大火炸至金黄酥脆,捞出沥油。(图6)
5. 待凉后切片,上碟。

┃INGREDIENT┃
5 slices pork loin (about 1 cm wide), 15 pcs salted egg yolks (shape 3 pcs into one strips and steam until
cooked), 2 sheets seaweed (cut into 5 sheets), 1 bowl bread crumbs, 120g minced prawn (marinate with dash of salt and egg white)
┃CONDIMENTS┃
½ tsp salt, ½ tsp chicken powder, ¼ tsp sugar, 1 tsp corn flour, ½ egg sauce
┃METHOD┃
1. Loosen the meat slices with mallet; and then marinate with condiments. (pic 1-2)
2. Spread meat slice on table top, place seaweed on top, spread some minced prawn over and top with
salted egg yolk, roll up. (pic 3-4)
3. Coat all the rolls with bread crumb. (pic 5)
4. Heat oil in wok, deep fry the rolls in low heat for about 1 minute; turn to high heat and deep fry until
golden brown and crispy, drain. (pic 6)
5. Slice and arrange on serving plate.
