印尼千层糕 Lapis Spekkok or Indonesian Lapis

材料:
牛油500克(稍微软化) 、细糖300克、A蛋黄22粒、A蛋白5个、印尼混合香料2汤匙(非五香粉) 、发粉1/2茶匙、挞挞粉1/2茶匙、乳化剂1汤匙、香草味香精2茶匙、炼奶150克、普通面粉150克(筛过)
9寸方形烤盘(铺油纸)
做法:
- 把烤炉预调至烧烤功能。
- 把所有材料以电动搅拌器高速搅拌至松发。
- 倒入一层面糊在烤盘里,然后烤至微黄。
- 接着倒入第二层面糊,再烤,重复工序至面糊用尽。
- 在烤最后一层时,把温度调到170℃,烤20分钟。
- 把蛋糕取出待凉后切薄片。
提示:若有哪一层的蛋糕表面出现气孔时,可以牙签戳破。
Ingredients
500 g butter, slightly soft but not greasy,300 g castor sugar,22 “Grade A” yolks
5 “Grade A” egg whites,2 Tbsps indonesian mixed spice powder [this is not the Chinese mix spice],½ tsp baking powder,½ tsp cream of tartar,1 Tbsp ovalette
2 tsps vanilla essence,150 g condensed milk,150 g plain flour, sifted
9” square cake pan, bottom lined
Method:
- Pre-heat oven to GRILL position, line the cake pan.
- Place all ingredients in the mixing bowl, using an electric beater, beat at high speed until fluffy.
- Pour a layer of batter into the cake pan, and grill the layer until light browned.
- Once browned, repeat another layer of batter and continue until all the batter is used up.
- For the last layer, turn the oven temperature to 170*C, bake for 20 minutes.
- Remove cake from oven and leave to cool before slicing into thin layers.
Notes: Should any of the layer bubbles up, use a toothpick prick the air bubble.
