东坡肉 Dong Bo Rou

【材料】
三层猪肉1公斤、蒜米4大粒(去衣)、冰糖4汤匙、黑酱油2汤匙、生抽5汤匙
【做法】
1.三层猪肉切大块,并以滚水川烫去除杂质,洗净滤干。(图1)
2.热锅,放入冰糖煮至溶解并呈金黄色及开始起泡。(图2-3)
3.加入生抽及黑酱油,迅速放入三层猪肉块及蒜米粒炒匀。(图4-6)
4.加入适量清水,转小火煮至肉软即可。(图7)


【Ingredients】
1 kg pork belly, 4 whole garlic (peeled), 4 tbsp rock sugar, 2 tbsp dark soy sauce, 5
tbsp soy sauce
【Method】
1.Cut pork belly into square and then blanch in boiling water, rinse and drain.(pic 1)
2.Heat rock sugar in wok until melted, slightly golden and started bubbling.(pic 2-3)
3.Add in soy sauce and dark soy sauce, put in pork belly and garlic, stir to mix.(pic 4-6)
4.Add in some water and braise in low heat until meat is tender, done.(pic 7)
