【材料】
小白菜80克、鲜莲子80克、鲜冬菇60克(切粗丁)、红萝卜80克(切粗丁)、素火腿80克(切粗丁)、雪耳10克(浸软)、大腐皮1大张、姜碎1茶匙、水1碗
【调味料】
素蚝油1汤匙、生抽1汤匙、糖1⁄4茶匙、胡椒粉1⁄4茶匙
【芡汁材料】
素蚝油1⁄2汤匙、胡椒粉1⁄8茶匙、水1⁄2碗、粟粉1⁄2茶匙、麻油1⁄4茶匙
【做法】
1. 先将浸发的雪耳剪小块;把腐皮摺起略湿水铺入碗中待用。
2. 烧热油把素火腿煎香。(图1)
3. 加入姜碎爆香,然后放入全部材料和调味料拌炒至香,最后加水,用小火煮至汁浓稠。(图2-4)
4. 盛起放入腐皮上,包好后蒸20分钟取出扣在碟上,把小白菜川烫沸水后排在碟边。(图5-8)
5. 将芡汁拌煮滚后浇上麻油淋上腐皮包上,即可一团和气上桌趁热享用。

【Ingredients】
80g Xiao bai chai, 80g fresh lotus seed, 60g fresh mushroom (diced), 80g carrot (diced), 80g mock ham (diced),10g white fungus (soaked), 1 sheet bean curd skin,1 tsp chopped ginger, 1 bowl water
【Seasoning】
1 tbsp vegetarian oyster sauce, 1 tbsp soy sauce, 1⁄4tsp sugar, 1⁄4 tsp pepper
【Gravy ingredients】
1⁄2 tbsp vegetarian oyster sauce,1⁄8 tsp pepper, 1⁄2bowl water, 1⁄2 tsp corn flour, 1⁄4 tsp sesame oil (add last)
【Method】
1. Cut soaked white fungus into small pieces; wet bean curd skin with some water and spread out in bowl.
2. Heat oil in wok and sear mock ham until fragrant.(pic 1)
3. Add in chopped ginger and stir-fry until fragrant, add in all ingredients and seasoning; and then pour in water and simmer in low heat until gravy reduced.(pic 2-4)
4. Transfer fried ingredients onto the bean curd bowl, wrap up and then steam for 20 minutes;dislodge on a serving plate, place the blanced vegetables to surround the beancurd skin parcel.(pic 5-8)
5. Bring gravy ingredients to a boil, drizzle in sesame oil and pour over the wrap to serve.
