烤鱼柳 Baked Fish and wedges

【材料】
美国马铃薯2大粒(洗净滚刀切)、橄榄油2汤匙、盐½茶匙、鱼柳800克、A蛋1粒(打散)
【裹料】
薯片50克(剁碎)、粟米片50克(剁碎)、混合香料1茶匙
【蘸酱】混合
美乃滋5-6汤匙、柠檬汁1茶匙、芥末酱1茶匙、腌小黄瓜2茶匙

【Ingredients】
2 large russet potatoes(scrubbed & cut into wedges), 2 tbsp olive
oil, ½ tsp salt, 800g fish fillet, 1 large egg (beaten)
【Coating】
50g salted Potato chips(crushed coarsely ), 50g cornflakes
(crushed), 1 tsp mixed dried herb
【Dipping sauce】combined
5-6 tbsps mayonnaise, 1 tsp lemon juice, 1 tsp mustard, 2 tbsps
chopped gherkins
【薯角做法】
1. 预热烤箱至160℃。将薯角用少许盐集油腌好备用。
2. 将裹料全部混合,放入薯角拌匀,铺放在涂油的烤盘上。放入烤箱烤30-40分钟或至薯角转成微黄。

【To prepare wedges】
1. Pre-heat oven to 160℃. Marinate potato wedges with oil and salt.
2. Mixes coating ingredients, roll the potatoes wedges in it and place onto a  greased tray drizzling with some oil. Bake for 30-40 minutes, turning   occasionally until golden & tender.


【鱼柳做法】
1. 鱼柳切4份以少许橄榄油、盐及胡椒粉腌妥。
2. 将鱼柳沾鸡蛋再沾上裹料。

【To prepare fish fillet】
1. Marinated fish fillet with a little olive oil, black pepper and salt.
2. Take a piece of fish; dip in beaten egg to coat evenly. Roll into
the crumbs, pressing firmly.

3. 把鱼柳铺在涂油的烤盘上,收入冰箱约30分钟让它定型。
4. 放入烤箱以200℃烤20-30分钟或至裹料转成微黄色。

3. Place crumbed fillets on a plate and refrigerate for 30 minutes to
an hour in the freezer. Repeat with remaining fish fillets.
4. Place fish fillets onto greased tray. Drizzle with some olive oil.
Bake @ 220 ℃ until fish is cooked about 20-30 minutes and
crumbs are golden in colour.


【吃法】
将烤好的薯角及鱼柳摆盘,吃时挤上少许柠檬汁,配搭酱料一起享用。

【To serve】
Serve fish fillet with baked potato wedges, sauces & a squeeze of
lemon.
