明灯迎新岁 Lighting up New Year

【材料】
A:芋头300克、澄面粉1 1⁄2 大匙、粟米粉1 1⁄2 大匙、五香粉1⁄2 小匙、盐 1⁄2 小匙、油1大匙
B:素火腿50克(切粒)、马蹄2粒(切粒)、粟米粒50克、红萝卜50克(切粒)、鲜冬菇3朵、西芹100克(
切粒)
【装饰】
冬粉30克(剪小段)、夏果10粒(沸水后略炸香待用)
【调味料】
素蚝油 1⁄2 大匙、生抽1大匙、胡椒粉 1⁄8 小匙、麻油 1⁄2 小匙
【做法】
1.把芋头去皮,切粗片,以大火蒸熟至松软,取出趁热压烂,加入剩余材料A快手拌均匀成芋泥团。(图1-2

2.将芋泥分割10粒,捏成杯型,然后油炸至金黄色,捞起,待用。(图3-6)
3.把冬粉下油锅炸松脆捞起铺在碟上,把已炸芋泥杯排放炸冬粉上面。
4.将材料B加入调味料炒香即可,分别放入炸芋泥杯中,上面排放夏果1粒,就像明灯迎新岁。(图7-8)

【Ingredients】
A:300g yam, 1 1⁄2 tbsp wheat starch, 1 1⁄2 tbsp corn flour, 1⁄2 tsp 5 spiced powder, 1⁄2 tsp salt, 1 tbsp oil
B:50g mock ham (diced), 2 water chestnut (diced), 50g corn kernel, 50g carrot (diced), 3 fresh mushroom,
100g celery (diced)
【Seosoning】
1⁄2 tbsp vegetarian oyster sauce, 1 tbsp soy sauce, 1⁄8 tsp pepper, 1⁄2 tsp sesame oil
【Garnishing】
30g glass noodles (cut short), 10pcs macadamia (blanched & deep fried)
【Method for dumplings】
1. Peel yam and slice thickly, and then steam till soften and mashed. Mixes yam paste with other ingredients A and knead into dough.
2. Apportion the yam dough into 10 pieces, shape like cup and then deep fry until golden brown.
3. Deep fry glass noodle until crispy, spread in plate and top with yam cups.
4. Stir-fry ingredients B with seasoning, dish out and separate into each yam cup, top with macadamia.
