拔丝排骨 Caramelized Ribs

[材料A]

肉排骨3条、盐1茶匙、糖2茶匙、胡椒粉少许

[材料B]

白糖150克、麦芽糖2汤匙

[面糊]

蛋白1粒、面粉100克、粟粉120克、蛋黄粉1茶匙、盐1/2茶匙、水适量

[做法]

1.将肉排骨加入盐、糖及胡椒粉拌匀,置放1小时。

2.然后以中火蒸40分钟取出待凉,再斩成每支约3寸长段。

3.把面糊拌匀裹入已熟的排骨,投入热油炸至金黄色,捞起沥油待用。

4.把B料煮至溶解呈现金黄色熄火,放入已炸好的排骨均匀沾满糖浆,取出快速浸入冰水中后立刻取出滴干水份,搽上少许油便可上碟。

 

Ingredients A:

3 blocks of spare ribs, 1 tsp salt, 2 tsp sugar, dash of pepper

Ingredients B:

150g sugar, 2 tbsp maltose

Batter:

1 egg white, 100g plain flour, 120g corn flour, 1 tsp custard powder, 1/2 tsp salt, some water

Method:

  1. Marinate spare ribs with salt, sugar and pepper for 1 hour.
  2. Steam ribs in medium heat for 40 minutes, let cool down and chop into 3 inches blocks.
  3. Mixes batter ingredients and coat on ribs; deep fry until golden brown, drain.
  4. Cook ingredients B until melted and caramelized, toss in fried ribs and quickly soak in ice water; dish out, drain and spread some oil onto it and serve.
