五香芋头糕 5 Spice Yam Cake

【材料】
芋头1公斤、清水1200毫升、粘米粉500克、香菇100克、虾米30克(剁碎)、鸡精粉45克、五香粉1茶匙、青葱50克(切粒)、红辣椒10克(剁碎)、蒜头2瓣(剁细)、食油45毫升
【做法】
1.香菇用温水浸软15分钟后切粒。
2.将芋头去皮切成小方块备用。
3.在大碗内将粘米粉和500毫升清水混合成滑面糊。(图1)
4.起锅热油,把香菇,虾米及蒜茸炒香后,取出留四分一供装饰用。(图2-3)
5.加入芋头及五香粉,并倒入剩余的清水,以慢火焖约3分钟后加入面浆,继续煮至汁稠。(图4-5)
6.加入青葱捞匀,再以适量鸡精粉调味。(图6)
7.把材料移到盆子里,放入蒸炉蒸30分钟即可。(图7-8)
8.用纸巾吸掉表面的水分,待完全冷却后才切开来吃。撒上炒过的香菇料,额外青葱丝和红辣椒茸装饰。

【Ingredients】
1kg yam,1200ml water, 500g rice flour, 100g dried shitake mushroom, 30g dried shrimp(chopped), 45g chicken stock powder, 1 tsp five spice powder,
50g spring onions(slices), 10g red chilies (chopped), 2 pips garlic(chopped), 45ml cooking oil
【Method】
1. Soak dried shitake mushroom in warm water for 15 minutes then cut them into small dice.
2. Cut yam into large cubes.
3. In a mixing bowl, mix rice flour with 500 ml of water. Whisk until smooth.(pic 1)
4. In a wok, stir-fry mushroom, dried shrimp and garlic until fragrant. Dish out quarter the mixture and keep aside for garnishing.(pic 2-3)
5. Add in yam and five spice powder to the wok, pour in remaining water. Allow to simmer for 3 minutes. Pour rice flour batter in to wok and continue cooking until thicken.(pic 4-5)
6. Add in chopped spring onions. Season with chicken stock powder. Adjust seasoning if necessary. (pic 6)
7. Transfer into a container and steam for 30 minutes. (pic 7-8)
8. Remove excessive water on surface of yam cake with paper towel.Allow to cool thoroughly before cutting. Garnish with fresh spring onions, chilies and
sautéed mushroom, dried shrimps, spring onions and chilies.
