白酒沙白 White Wine Clams

┃材料┃

沙白(蛤蜊)1-2kg、甜白酒1杯、姜丝30克、蒜5瓣(剁碎)、指天椒4条、酸柑2粒(挤汁)、九层塔一把、牛油少许

┃做法┃

热锅,加入少许牛油爆香姜丝、蒜末及小辣椒。
加入沙白,稍微拌炒一下。
倒入白酒,盖锅焖煮直到蛤蜊壳全开即可熄火,加入九层塔及酸柑汁即可。

┃INGREDIENT┃

1-2kg claims, 1 cup sweet white wine, 30g juliennes ginger, 5 pips garlic (chopped), 4 chilli padi, 2 lime (juice), 1 bunch of basil, some butter

┃METHOD┃

1.Heat butter in wok, sauté ginger, garlic and chilli padi until fragrant.
2.Add in claims and stir-fry briefly.
3.Pour in white wine, cover lid and simmer until all claim’s shell opened; turn off heat, toss in basil and lime juice before dishing out.
