素咸鱼酿瓜脯 Stuffed Hairy Gourd

材料
节瓜500克、山药50克、豆干1块、素梅香咸鱼50克、素火腿30克、鲜冬菇2朵、芫茜少许(装饰)
500g hairy gourd, 50g mock salted fish, 30g mock ham, 2 fresh mushroom, 50g fresh Huai Shan, 1 pc harden bean curd, some coriander for garnishing

调味料
胡椒粉 1⁄4小匙、盐 1⁄4小匙、薯粉1大匙
1⁄4 tsp pepper, 1⁄4 tsp salt, 1 tbsp tapioca flour

汁料
生抽1汤匙、麻油 1⁄2小匙
1 tbsp soy sauce, 1⁄2 tsp sesame oil

做法
1.将节瓜去皮,切3cm圆段,再去籽,中间挖洞,涂上少许薯粉待用。(图1-2)
1.Peel hairy gourd and cut into 3cm thick ring, seeded and leave empty hole in the middle; coat with some tapioca flour.(pic 1-2)

2.山药去皮磨成泥状,豆干压成泥,放入大碗加入调味料拌匀待用。(图3)
2.Peel fresh Huai Shan and grate into puree; mash bean curd and mixes all with seasoning.(pic 3)

3.把鲜冬菇、素火腿、素梅香咸鱼切末,烧热镬用少许油炒至香盛起,加入山药、豆腐泥中搅拌均匀,酿入节瓜内,然后排放蒸盘上,入蒸镬以大火蒸15-20分钟,取出淋上汁料,用芫茜装饰上桌享用。(图4-5)
3.Chop fresh mushroom, mock ham and mock salted fish finely; saute with some oil until fragrant; then mix in mashed ingredients, stuff into the hairy gourd and steam in high heat for 15-20 minutes. Pour sauce over and garnish with coriander.(pic 4-5)
