素芋角 Vegetarian Yam Dumpling

馅料:

罐装青豆3大匙、罐装黄豆1小罐、素叉烧粒1/2碗、香菇4朵(切粒)、马蹄3粒(切粒)

调味料:

糖1小匙、五香粉1/8小匙、素蚝油1大匙、胡椒粉少许、粟粉1大匙

馅料做法:

烧热2大匙油爆香所有馅料,加入调味料炒至汁料稍浓,加入适量粟粉水调浓。盛起待冷后用。

皮料:

芋泥600克、澄面粉115克、滚水210毫升、发粉1小匙、白油115克、盐1/2小匙、糖1大匙、五香粉1/8小匙

芋角做法:

1.将滚水与澄面粉拌匀成熟澄面团后加入芋泥拌匀,再加入其余的材料搓成柔滑的面团。

2.将皮料面团分成同等份,包入馅料。

3.烧热一锅油,放入芋角炸至脆身及金黄色,捞起沥干油份,即可享用。

Filling:

3 tbsp canned peas, 1 small canned baked bean, 1/2 bowl vegetarian Char Siew, 4 pcs mushroom (diced), 3 pcs water chestnut (diced)

Seasoning:

1 tsp sugar, 1/8 tsp 5 spiced powder, 1 tbsp vegetarian oyster sauce, dash of pepper, 1 tbsp corn flour

Method for filling:

Heat 2 tbsp oil in wok sauté all ingredients until fragrant, then toss in seasoning and cook until gravy reduced; thicken with starch and dish out. Set to cool.

Dumpling skin:

600g mashed yam, 115g wheat flour, 210ml boiling water, 1 tsp baking powder, 115g ghee, 1/2 tsp salt, 1 tsp sugar, 1/8 tsp 5 spiced powder

Method:

  1. Mix wheat flour with boiling water and then add in mashed yam and other ingredients and knead into smooth dough.
  2. Apportion dough into desired size and wrap in filling.
  3. Deep fry the yam dumpling until golden brown, drain and serve.
