照烧三文治 Teriyaki toasts

【材料】
鸡胸肉250克(切薄片)、栗米粉1茶匙、胡椒粉1⁄2茶匙、食
油1茶匙、青葱1棵(切粒)、面包6片、芝士3片、烤芝麻2汤匙
【照烧酱汁】
清水1⁄2杯、酱油60毫升、蒜头1瓣(剁碎)、姜汁2汤匙、白糖3-4
汤匙、花雕酒1汤匙、黑酱油少许、鸡粉1茶匙
【做法】
1. 把照烧酱汁材料放入锅里煮至减半,试味后熄火,让它冷
却。(图1-2)
2. 把鸡肉切小块,用栗米粉,胡椒粉及食油腌鸡肉,然后加
入照烧酱腌30分钟。(图3-4)
3. 热不黏锅,把鸡肉炒至熟后加入少许照烧酱,再撒上芝
麻。(图5)
4. 把面包烤过后铺上照烧鸡肉,芝士及青葱,然后放入烤炉
再烤2分钟至芝士溶解即可。(图6-8)
【Ingredients】
250 g chicken breast meat(sliced thinly), 1 tsp corn
flour,1⁄2tsp pepper, 1 tsp oil, 2 tbsps toasted sesame
seeds, 1 spring onions(sliced), 6 slices bread, 3 slices
cheese
【Teriyaki sauce】
1⁄2 cup water, 60 ml soya sauce, 1 clove garlic(chopped),
2 Tbsps ginger juice, 3-4 Tbsps sugar or to taste, 1 Tbsp
chinese wine, a little dark soya sauce, 1 tsp chicken stock
granules
【Method】
1. In a small saucepan, boil teriyaki sauce until sauce reduces
by half. Adjust seasonings to taste & turn off heat,
leave to cool.(pic 1-2)
2. Marinate chicken slices with corn flour, pepper & oil. Then
add the teriyaki sauce. Leave aside for 30 minutes.(pic
3-4)
3. Heat a non stick pan, add some cooking oil & pan fry the
chicken pieces. Pour over some teriyaki sauce, remove
from heat. Sprinkle toasted sesame seeds over.(pic 5)
4. Toast the bread slices till lightly brown, top with chicken
teriyaki, sprinkle some cheese over with spring onions &
just grill for 2 minutes until cheese melts. Serve immediately.(
