材料
香草味雪糕1盒
1 box vanilla ice cream (store bought)

无面粉海绵蛋糕材料
蛋黄90克、蛋白120克、白糖144克、可可粉45克
90g egg yolk, 120g egg white, 144g sugar, 45g cocoa powder

无面粉海绵蛋糕做法
1.把蛋黄和1⁄4的白糖搅拌至发起,加入可可粉拌匀。(图1)
1.Whip egg yolk and quarter of the sugar till thick and fluffy, fold in cocoa powder. (pic 1)

2.另外把剩余的白糖和蛋白打至发起成蛋白霜。
2.In another clean mixing bowl, whisk egg white with the remaining sugar till obtain soft peak meringue.

3.在蛋黄混合料里慢慢加入蛋白霜拌匀。涂在铺油纸的烤盘上。(图2)
3.Combine meringue with the chocolate batter. Spread batter on a baking tray lined with baking paper.(pic 2)

4.放入预热至170℃的烤炉里烤约12分钟即可。(图3)
4.Bake in oven at 170℃ for approximately 12 minutes.(pic 3)

意式蛋白霜材料
蛋白100克、白糖200克、清水50克
100g egg white, 200g sugar, 50g water

意式蛋白霜做法
1.把白糖加水煮至116-118℃。
1.Boil sugar and water to 116℃-118℃.

2.另外用慢速搅拌蛋白,加入糖浆,高速搅拌至雪白细滑,室温即可。(图4)
2.Whip egg white on low speed. Pour sugar syrup into meringue and whip on high speed until white, shiny and reaches room temperature.(pic 4)

组合
1.用模型在海绵蛋糕上切割出心形形状,两片海绵蛋糕中间铺上雪糕,再涂上意式蛋白霜。(图5-7)
1.Cut the flourless sponge sheet into desired shape, sandwich it with the vanilla ice cream using a heart shape mould, then cover with Italian meringue.(pic 5-7)

2.上桌时用手持喷火筒点燃意式蛋白霜。(图8)
2.Torch the meringue using a blowtorch.(pic 8)

3.淋上朗姆酒制造火焰效果。
3.Flambe with rum.
