咸水角 Salty Dumpling

皮料:
淀粉(A)20克、糯米粉(B)150克、白油(C)1汤匙、糖(D)50克
馅料:
白萝卜丝300克、香菇碎2汤匙、菜莆碎2汤匙、素腌鸭150克、芫茜碎1汤匙
调味料:盐1/2茶匙、糖1汤匙、生抽1汤匙、五香粉及麻油少许
做法:
1.将全部粉料放入碗中,加入滚水搅拌成至光滑成皮料。
2.爆香香菇及菜莆,然后加入白萝卜及素腌鸭炒香后,加入调味及献料即可待用。
4.将皮料分小块搓平包入馅料,放入油锅炸至金黄色。
Skin:
20g Tapioca flour (B) 150g glutinous rice flour (C) 1 tbsp ghee (D) 50g sugar
Filling:
300g shredded radish, 2 tbsp chopped mushroom, 2 tbsp chopped pickled radish, 150g mock duck, 1 tbsp chopped coriander
Seasoning
1/2 tsp salt, 1 tbsp sugar, 1 tbsp soy sauce, dash of 5 spice powder and sesame oil
Method:
- Mixes all flour in mixing bowl, pour in boiling water and knead into smooth dough.
- Sauté mushroom and pickled radish until fragrant, then toss in radish and mock duck, then add in seasoning and thicken with starch.
- Wrap filling with apportioned dough and then deep fry until golden brown.
