咸水角 Salty Dumpling

皮料:

淀粉(A)20克、糯米粉(B)150克、白油(C)1汤匙、糖(D)50克

馅料:

白萝卜丝300克、香菇碎2汤匙、菜莆碎2汤匙、素腌鸭150克、芫茜碎1汤匙

调味料:盐1/2茶匙、糖1汤匙、生抽1汤匙、五香粉及麻油少许

做法:

1.将全部粉料放入碗中,加入滚水搅拌成至光滑成皮料。

2.爆香香菇及菜莆,然后加入白萝卜及素腌鸭炒香后,加入调味及献料即可待用。

4.将皮料分小块搓平包入馅料,放入油锅炸至金黄色。

 

Skin:

20g Tapioca flour (B) 150g glutinous rice flour (C) 1 tbsp ghee (D) 50g sugar

Filling:

300g shredded radish, 2 tbsp chopped mushroom, 2 tbsp chopped pickled radish, 150g mock duck, 1 tbsp chopped coriander

Seasoning

1/2 tsp salt, 1 tbsp sugar, 1 tbsp soy sauce, dash of 5 spice powder and sesame oil

Method:

  1. Mixes all flour in mixing bowl, pour in boiling water and knead into smooth dough.
  2. Sauté mushroom and pickled radish until fragrant, then toss in radish and mock duck, then add in seasoning and thicken with starch.
  3. Wrap filling with apportioned dough and then deep fry until golden brown.
